Making mayonnaise sauce
Mayonnaise sauce is a mayonnaise diluted with some sour cream, savored like the mayonnaise.
To prepare the sauce just mix the ingredients.
Quantity is quite much in this recipe, it results about 2.5 cup mayonnaise sauce, enough for two tins of maize or 2 font mushrooms.
The seasoning of the mayonnaise sauce is matter of taste. I wrote a basic version. The quantity of spices depends on the use. For examle mayonnaise maize needs slightly sweeter sauce than mayonnaise potato.
To prepare mayonnaise sauce you should use white pepper. The reason for this is nothing else that in the white sauce white pepper isn’t visible, it won’t be small black dots in the sauce. But for the taste, of course, black pepper is excellent.
The sour cream can also replaced all or portions of cream. The result is slightly softer and sweeter sauce. In this case it is better to add more lemon juice or vinegar.
- 12 – 14 ounce mayonnaise
- 8 ounce sour cream
- 2 teaspoon sugar
- 1 teaspoon mustard
- 1 tablespoon lemon
- Add salt to taste
- Add ground white pepper to taste
Using mayonnaise sauce
Mayonnaise sauce is the basis of every mayonnaise salad. In other words, contrary to the popular belief and name, in case of „mayonnaise” salads the sauce isn’t just a kind of mayonnaise, but it’s seasoned and diluted with sour cream.
In addition, the mayonnaise sauce – called tartar sauce – is usually served with fried foods, whether at home or in a restaurant. However it should be noted, that this is essentially a misunderstanding, because mayonnaise sauce isn’t tartar sauce. The latter comprises further spices, usually white wine in the Hungarian version, while international versions comprise other green spices.
